Out of the Recipe Box

Having a recipe to follow makes me feel secure but the fact that I am unable to follow a recipe as is (I blame my mother - sound familiar?) has made me a happier cook, diner and Weight Watcher. Since joining Weight Watchers over a year ago I've tried to continue to cook flavorful food, meet the "Good Health Guidelines" and stay within my Points allowance. This juggling act has led me to re-think recipes, whether old favorites or new-to-me and think out of the box.

I am a woman of a "certain" age, wife of 33 years and mother for 27 years. I am a Weight Watcher member attempting to trim down, married to a husband with Type I diabetes who couldn't gain weight if he tried. Along with counting points for me and tracking carbs for him, I try to satisfy both of us. I may be trying to cook in a more healthy manner but butter and bacon are still in my frig, they just last longer! While following Weight Watchers the past year and a half I've had to think outside of the box, changing and adapting recipes old and new, to find a healthier balance. And we like it, we really like it!
